This is the first tea that we had from Farmer Yang, and we instantly fell in love. Coming from high mountain wild tea tree gardens in Jing Mai, Yunnan, this 200 year old tree Dian Hong red tea is an absolute treat. High mountain has the best conditions for growing tea, as the daytime has heavy sun while the evenings are cool, slowing down the growing process allowing the tea to develop more complexity before maturation. These leaves are also from Ancient trees which are over 200 years old, giving these teas centuries to develop a rich flavor profile and length both in energy and on the palate.

Our 2022 Ancient Tree Dian Hong has the typical Apricot notes of the Jing Mai region to start, but moves into other territories in later brews, with notes of stone fruits and a lasting vanilla sweetness on the tongue. This Dian Hong is made of the cultivar typically used for Puer, the Big Leaf Varietal, giving this red tea added body, and puer spice notes in later brews.  This tea also has a very relaxing energy that is noticeable from the start and lasts throughout the session.

Fun fact – for our Prize-winning Tea infused cocktail, we infused this Ancient Tree Dian Hong tea in Moutai Bai Jiu for the Moutai Cocktail competition organized by the Finnish Bartenders association and Moutai (the largest distillery in the world), and judged by the previous Finnish and World Bartenders champions.

Brewing Method

Gōng Fū Chá Style

5-6g tea to 150ml water
Brewing Method 1 – for more fruity sweet taste:

1st brew: 85C,45 sec
2nd brew: 90C, 30 sec
3rd+: 95-100C, add 15 sec each time

Brewing Method 2 – for fuller taste and sensations:

1st brew: 100C, immediate
2nd brew: 100C, immediate
3rd+: 100C, add 10 sec each time

It can be brewed up to 5-7 or even more brews.

To brew Gōng Fū Chá Style, preheat the teapot before putting tea leaves, and then start with the first quick brew, around 5-10 seconds.*

For the continuing brews, we recommend to play with the brewing time with the temperature. For your reference, the brewing time can be increased 5-10 seconds on each brew.**

* Some people may want to do a “wash” for their tea, we sometimes do sometimes doesn’t, for the aged ones we do, so it is up to you. You can actually compare which taste you prefer – throw away the first or not. 
** Each tea is alive in this own way, this is just a recommended brewing method. We encourage you to listen to the tea, listen to yourself, feel the tea and experiment with the tea.
